Small batches, shaped by hand
Whether it’s a tray of chocolate bark, a batch of maple sponge cakes, or a handful of Snickerdoodle Bites, everything is mixed, shaped, and finished in my FSA 5‑star kitchen. I work in small quantities so every treat gets attention, and every batch tastes like something made at home, not in a factory.
All bakes are now available by pre‑order only, with collection arranged by appointment to keep things calm, fresh, and intentional.
Bread, made with intention
I’m not milling fresh flour at the moment, but I still bake bread the way I always have: slow, simple, and by feel. Bread is available by request and baked in small batches using quality ingredients and traditional methods.

Why My Bread is Different
At Dinwiddie Hearth, bread is made the slow, simple way — small batches, shaped by hand, with ingredients you can trust. Whether it’s my traditional yeast‑raised loaves or my enriched 70/30 sourdoughs, the principles stay the same: honesty, intention, and respect for the grain.
Most supermarket breads are made for shelf‑life rather than flavour. To stay soft for weeks, they rely on preservatives, dough conditioners, and improvers that help the dough behave consistently on industrial machinery. It’s efficient, but it isn’t the same as slow, hands‑on craft.
Looking Ahead: Returning to Fresh‑Milled Flour
When mandatory folic‑acid fortification comes into effect in the UK, I’ll be returning fully to fresh‑milled flour for all my breads and bakes — unless I can source an unaltered white flour from a trusted supplier.
Fresh‑milling keeps the grain’s natural oils, aroma, and character intact. Nothing is lost, nothing is stabilised, nothing is altered. It’s flour as it has been for centuries, and it’s the direction I’m committed to moving back toward.
